Preparation process Mezcal REY ZAPOTECO
Home Ritual ( preparation)

1 - Sacrifice (Cut )

The beginning of the ritual begins cutting arms warriors ( leaves of the agave ) with approximate age of 8-10 years, leaving only the heart or pineapple and then be torn from mother earth and be offered up to the fire, these warriors ( agaves ) weigh between 120 and 200 kilos or more.

2 - Cooking / Baking

These hearts and pineapples are offered up to the fire and cooked with split firewood in a stone oven encavado soil with approximately 3 m diameter by 2 m depth for 3 days according to the benevolence of Mother Nature .

3 - Grinding

Fragmented Hearts Warriors ( agaves ) remains to ofrendar further fragment the stone mill that is pulled by a horse to be broken off and mash.

4 - Fermentation

The remains of slaughtered hearts ( agaves ) are deposited in tubs of water to let wood vertiéndoles fermenting their own sugars, and transform them into tepache generate their own spirits .

5 - Distillation

Again offering fire appears empty when the guardians called tepache stills made ​​of copper connected to a coil where the vaporized alcohol become the ancestral elixir called mezcal.

6 - Refined

Elixir obtained is poured back into the guards ( stills ) to repeat the ritual purification and removing any residual water remaining thus concluding the ritual , obtaining a pure ( mezcal ) and signature drink.
